1 pound sirloin steak, cut into bite-sized cubes

1 pound baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: In a large pot, add the halved baby potatoes and cover them with cold water. Add a generous pinch of salt. Bring to a boil over medium heat and cook for about 15 minutes or until fork-tender. Once done, drain the potatoes and set aside.

    Brown the Steak Bites: In a large skillet, heat the olive oil over medium-high heat. Season the steak cubes with salt and pepper. Add them to the skillet in a single layer.
