Garlic Butter Steak and Potatoes Skillet

1 lb (450g) sirloin steak, cut into bite-sized pieces

1 lb (450g) baby potatoes, halved

4 tbsp unsalted butter

4 cloves garlic, minced

1 tsp fresh rosemary, chopped (or ½ tsp dried)

1 tsp fresh thyme, chopped (or ½ tsp dried)

½ tsp red pepper flakes (optional)

Salt and pepper, to taste

2 cups baby spinach (optional, for serving)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: Place the halved baby potatoes in a large pot of salted water and boil for about 10-12 minutes, or until fork-tender. Drain and set aside.

    Sear the Steak: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Season the sirloin pieces with salt and pepper. Once the butter is hot, add the steak and sear for 3-4 minutes, or until browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside.

      Cook the Potatoes: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the cooked potatoes, rosemary, thyme, and red pepper flakes (if using). Sauté for about 5-7 minutes until the potatoes are crispy and golden brown on the edges.

        Add Garlic and Steak: Once the potatoes are golden, push them to the side of the skillet. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Then, return the cooked steak to the skillet and stir everything together, cooking for an additional 1-2 minutes to heat through.
