2 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional for spice)

8 ounces penne pasta

1 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.

      Sear the Chicken: Once the oil is hot, add the seasoned chicken breasts to the skillet. Cook for about 5-6 minutes on each side or until the chicken is golden brown and cooked through. Remove from skillet, let rest for a couple of minutes, then slice into strips.

        Sauté the Vegetables: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add cherry tomatoes and cook until they soften (about 3-4 minutes). Stir in the fresh spinach, Italian seasoning, and red pepper flakes, cooking until the spinach wilts.

          Create the Sauce: Pour in the heavy cream, stirring to combine with the vegetables. Let the mixture simmer for 2-3 minutes until slightly thickened. If needed, add a bit of the reserved pasta water to reach desired sauce consistency.

            Combine Everything: Add the sliced chicken and the cooked penne pasta to the skillet. Stir to coat everything in the creamy sauce. Mix in the grated Parmesan cheese until melted and creamy.
