Easy Spinach & Ricotta Stuffed Shells

12 jumbo pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/2 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Pasta Shells:

    Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside to cool slightly.

      Prepare the Filling:

        In a large mixing bowl, combine the ricotta cheese, chopped spinach, grated Parmesan cheese, half of the mozzarella cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until all ingredients are well blended.

          Stuff the Shells:

            Using a spoon, carefully fill each cooked pasta shell with about 2 tablespoons of the ricotta and spinach mixture. Be generous but avoid overstuffing.

              Assemble the Dish:

                Preheat your oven to 350°F (175°C). Spread 1 cup of marinara sauce evenly at the bottom of a 9x13 inch baking dish. Arrange the stuffed shells on top of the sauce. Pour the remaining marinara sauce over the shells, then sprinkle the remaining mozzarella cheese on top.

                  Bake the Shells:

                    Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

                      Serve:

                        Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy your delicious stuffed shells!
