Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

12 large pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 cups marinara sauce

Fresh basil leaves for garnish

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta Shells: Bring a large pot of salted water to a boil. Add the pasta shells and cook according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare Filling: In a mixing bowl, combine the chopped spinach, ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, egg, minced garlic, Italian herbs, salt, and pepper. Mix until well combined.

        Stuff Shells: Carefully fill each cooked pasta shell with about 2 tablespoons of the ricotta-spinach mixture. Place the stuffed shells in a lightly greased baking dish.

          Add Marinara: Pour the marinara sauce evenly over the stuffed shells, ensuring they are covered.

            Sprinkle Cheese: Top with the remaining 1/2 cup of shredded mozzarella cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
