Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

12 large pasta shells

1 cup ricotta cheese

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the pasta shells: Boil a large pot of salted water and cook the shells for 10-12 minutes until al dente. Drain and gently rinse under cold water to cool them down. Set aside.

      Prepare the filling: In a large mixing bowl, combine the ricotta cheese, chopped spinach, 1/2 cup mozzarella cheese, Parmesan cheese, egg, minced garlic, oregano, salt, and pepper. Mix until well combined.

        Stuff the shells: Spoon the ricotta and spinach mixture into each cooked shell generously.

          Assemble the dish: Spread 1 cup of marinara sauce on the bottom of a 9x13-inch baking dish. Arrange the stuffed shells on top of the sauce. Pour the remaining marinara sauce over the shells and sprinkle the remaining 1/2 cup of mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil and bake for 20-25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

              Serve: Remove from the oven, let it cool for a few minutes, and garnish with fresh basil leaves if desired. Serve warm.
