3 medium russet potatoes, diced into small cubes

1 cup cooked and crumbled breakfast sausage

1/2 cup diced bell peppers (red and green)

1/2 cup diced onions

1 cup fresh spinach, roughly chopped

4 large eggs

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup shredded cheddar cheese

Fresh chives or green onions for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced potatoes. Season with salt, pepper, garlic powder, and smoked paprika. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender.

    Add the diced bell peppers and onions to the skillet. Sauté for an additional 5-7 minutes until the vegetables are softened and fragrant.

      Stir in the cooked breakfast sausage and fresh spinach, cooking until the spinach wilts down. If the mixture seems dry, feel free to add a splash of water or broth.

        Create four small wells in the hash mixture and crack an egg into each well. Cover the skillet and cook for about 3-5 minutes, or until the eggs are cooked to your desired doneness (runny yolk or firm).
