Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

For the Chicken Skewers:

1 lb boneless, skinless chicken thighs, cut into 1-inch pieces

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

2 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon chili flakes (adjust to taste)

Juice of 1 lime

Wooden skewers (soaked in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon brown sugar

1 teaspoon sriracha (optional for heat)

Chopped peanuts and fresh cilantro for garnish

Instructions
 

Marinate the Chicken:

    In a large bowl, combine the soy sauce, fish sauce, brown sugar, minced garlic, ground ginger, chili flakes, and lime juice. Add the chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

      Prepare the Peanut Sauce:

        In a medium bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and sriracha until smooth and creamy. Adjust the seasoning to taste, adding more lime juice or sriracha for tang or heat. Set aside.

          Skewer the Chicken:

            Preheat the grill to medium-high heat. Thread the marinated chicken pieces onto the soaked wooden skewers, leaving a little space in between each piece for even cooking.

              Grill the Skewers:

                Place the skewers on the grill and cook for about 4-5 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

                  Serve:

                    Once grilled, remove the skewers from the grill and let them rest for a few minutes. Serve with the peanut sauce drizzled over the top or on the side for dipping. Garnish with chopped peanuts and fresh cilantro for an extra burst of flavor.
