Ingredients

4 large eggs

1 cup milk (whole or skim)

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

8 slices of thick bread (Brioche or Challah work best)

4 tablespoons unsalted butter

1/2 cup brown sugar

1 ripe banana, sliced (optional)

Fresh strawberries or other berries for garnish (optional)

Maple syrup, for serving

Instructions

Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, vanilla extract, cinnamon, and salt until well combined.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat and add 1 tablespoon of butter. Let it melt and coat the surface.

Coat the Bread: Dip each slice of bread into the egg mixture, allowing it to soak for a few seconds, then flip it to coat the other side. Shake off any excess liquid.

Cook the French Toast: Place the soaked bread slices onto the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove and keep warm.

Caramelize the Sugar: In the same skillet, add brown sugar and lower the heat. Add the remaining butter and stir until melted and bubbling. If using, layer the banana slices in the caramel for a minute, allowing them to soften slightly.

Serve: Plate the French toast and drizzle the caramelized mixture on top. Garnish with fresh strawberries or other berries if desired, and serve with maple syrup on the side.
