Ingredients

8 oz linguine pasta

2 tablespoons unsalted butter

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup vegetable or chicken broth

½ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Zest and juice of 1 lemon

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside.

Prepare the Chicken: In a large skillet over medium heat, melt the butter. Once melted, add the chicken pieces, season with smoked paprika, chili powder, cayenne, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 6-8 minutes.

Add the Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.

Create the Sauce: Pour in the broth and bring it to a simmer. Add the heavy cream, stirring to combine. Continue to simmer for about 3-4 minutes until the sauce thickens slightly.

Mix in the Tomatoes: Add the halved cherry tomatoes and cook for another 2-3 minutes until they soften.

Combine Pasta and Sauce: Toss the cooked linguine into the skillet, ensuring the pasta is well-coated with the sauce. Stir in grated Parmesan cheese, lemon zest, and lemon juice; adjust seasoning if necessary.

Serve: Divide the Cowboy Butter Chicken Linguine among plates, garnish with fresh parsley, and enjoy a hearty meal full of flavor!
