1 lb boneless, skinless chicken breasts

1 packet (1 oz) chipotle ranch seasoning mix

1 tablespoon olive oil

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn (fresh, canned, or frozen)

1 large avocado, sliced

1 cup shredded cheddar cheese

1 cup salsa (your choice of mild, medium, or spicy)

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Marinate the Chicken: In a bowl, coat the chicken breasts with olive oil and the chipotle ranch seasoning mix. Make sure each piece is thoroughly covered. Let marinate for at least 30 minutes or up to 2 hours in the refrigerator for deeper flavor.
