Easy Chipotle Ranch Grilled Chicken Burrito

2 large chicken breasts, boneless and skinless

1/4 cup chipotle ranch dressing

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup shredded cheese (cheddar or a Mexican blend)

1 avocado, sliced

1 cup fresh spinach or lettuce

Optional: additional chipotle ranch dressing for drizzling

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken breasts, chipotle ranch dressing, smoked paprika, garlic powder, onion powder, salt, and pepper. Ensure the chicken is evenly coated. Cover and marinate in the fridge for at least 30 minutes, or up to 2 hours for more flavor.

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Once cooked, let the chicken rest for 5 minutes before slicing it into strips.

      Prepare the Burrito: Lay out a flour tortilla on a clean surface. In the center, layer about 1/4 cup of cooked rice, 1/4 cup black beans, 1/4 cup corn, and a generous amount of sliced grilled chicken. Add a handful of cheese, a few slices of avocado, and a handful of fresh spinach or lettuce.

        Wrap the Burrito: Fold in the sides of the tortilla and then roll it from the bottom up to enclose the filling. Repeat with the remaining tortillas.

          Toast the Burrito: You can either grill the wrapped burritos for an additional 1-2 minutes on each side until golden and crispy or use a sandwich press to gently toast them.

            Serve and Enjoy: Slice the burritos in half and serve with a side of chipotle ranch dressing for dipping, if desired.
