Easy Asian Cucumber Salad

Ingredients
  

2 large English cucumbers (or 3 smaller cucumbers)

1 teaspoon salt

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or sugar (adjust to taste)

1 teaspoon chili oil (optional for heat)

1 clove garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons sesame seeds

2 green onions, thinly sliced

Fresh cilantro leaves for garnish (optional)

Instructions
 

Start by washing the cucumbers thoroughly. If using English cucumbers, you can leave the skin on for added texture; otherwise, peel the smaller cucumbers. Cut the cucumbers in half lengthwise and then slice them into thin half-moons.

    Place the sliced cucumbers in a colander and sprinkle them with salt. Let them sit for about 15-20 minutes to draw out excess moisture. This will help keep your salad crisp.

      In a bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or sugar), chili oil (if using), minced garlic, and grated ginger until well combined.

        After 20 minutes, rinse the cucumbers under cold water to remove excess salt, and then dry them gently with paper towels.

          In a large mixing bowl, add the cucumbers and pour the dressing over them. Toss to coat evenly.

            Add sesame seeds and sliced green onions to the salad, and give it another gentle toss.

              Allow the salad to marinate for at least 10 minutes at room temperature (or refrigerate for up to 1 hour) to let the flavors meld together.

                Serve chilled or at room temperature, garnished with fresh cilantro leaves if desired. Enjoy!
