Ingredients
  

1 kg chicken, cut into pieces

1 can (400ml) coconut milk

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1-inch piece of fresh ginger, grated

2-3 green chilies, slit (adjust for spice level)

1 teaspoon ground turmeric

1 teaspoon ground coriander

1 teaspoon ground cumin

1/2 teaspoon garam masala

Salt, to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

2 cups of cooked rice or ugali (for serving)

Instructions
 

Marinate the Chicken: In a bowl, mix the chicken pieces with lime juice, salt, turmeric, coriander, and cumin. Allow it to marinate for at least 30 minutes (or overnight for deeper flavor).

    Sauté Aromatics: In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Then add the minced garlic, grated ginger, and slit green chilies, cooking for another 2-3 minutes until fragrant.

      Cook Chicken: Add the marinated chicken to the pot and cook until it's browned on all sides, about 10 minutes.

        Add Coconut Milk: Pour in the coconut milk, bringing the mixture to a gentle simmer. Stir in the garam masala. Cover and cook for 20-25 minutes, or until the chicken is cooked through and tender.

          Adjust Seasoning: Taste and adjust the salt and seasoning as necessary. If you want a thinner sauce, you can add a bit of water to reach your desired consistency.

            Garnish and Serve: Once done, remove from heat and garnish with fresh chopped cilantro. Serve your Kuku Paka with warm rice or ugali.
