2 large boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup sun-dried tomatoes, chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 cup chicken broth

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a medium bowl, mix together the chopped spinach, feta cheese, sun-dried tomatoes, minced garlic, oregano, salt, and black pepper until well combined.

      Prepare the Chicken: Carefully cut a pocket into each chicken breast. Start at the thicker side and cut horizontally to create a space for the stuffing, being careful not to cut all the way through.

        Stuff the Chicken: Generously fill each chicken pocket with the spinach and feta mixture. Secure the openings with toothpicks if necessary to keep the stuffing inside.

          Sear the Chicken: In an oven-safe skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side, until they are golden brown.

            Add Broth: Once both sides are seared, pour the chicken broth into the skillet to add moisture.

              Bake: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                Rest and Serve: Remove the skillet from the oven and let the chicken rest for about 5 minutes. Carefully remove the toothpicks and slice the chicken for serving. Garnish with fresh basil leaves if desired.
