For the Chicken Cordon Bleu:

4 boneless, skinless chicken breasts

4 slices of ham (preferably black forest or smoked)

4 slices of Swiss cheese

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

Salt and pepper, to taste

2 tablespoons of Dijon mustard

1 tablespoon olive oil

Toothpicks or kitchen twine

For the Creamy Swiss Cheese Sauce:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup milk (whole or 2%)

1 cup shredded Swiss cheese

Salt and pepper, to taste

A pinch of nutmeg

Instructions
 

Prepare the Chicken:

    - Preheat your oven to 375°F (190°C).

      - Between two pieces of plastic wrap, pound each chicken breast to about 1/2 inch thickness for even cooking.

        - Season both sides with salt and pepper.

          Assemble the Cordon Bleu:

            - Spread a thin layer of Dijon mustard on each flattened chicken breast.

              - Place a slice of ham and a slice of Swiss cheese on top of each chicken breast, leaving one edge clear for rolling.

                - Roll the chicken tightly from the ham and cheese end towards the clear edge. Secure with toothpicks or tie with kitchen twine.

                  Coat the Chicken:

                    - Set up a breading station: Place flour in one bowl, beaten eggs in a second, and breadcrumbs in a third.

                      - Dredge each chicken roll in flour, shaking off excess, dip in beaten eggs, then roll in breadcrumbs until fully coated.

                        Cook the Chicken:

                          - In a large oven-safe skillet, heat the olive oil over medium heat.

                            - Once hot, add the breaded chicken rolls and cook for about 4-5 minutes on each side until golden brown.

                              - Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).

                                Prepare the Creamy Swiss Cheese Sauce:

                                  - In a medium saucepan over medium heat, melt the butter.

                                    - Whisk in the flour and cook for about 1 minute to make a roux.

                                      - Gradually add the milk, whisking continuously until the mixture is smooth and starts to thicken.

                                        - Stir in the shredded Swiss cheese until melted and creamy. Season with salt, pepper, and a pinch of nutmeg. Remove from heat.

                                          Serve:

                                            - Once the chicken is cooked, remove it from the oven, let it sit for a few minutes, then slice into rounds.

                                              - Drizzle the creamy Swiss cheese sauce over the chicken or serve it on the side for dipping.

                                                - Garnish with chopped parsley if desired.
