Ingredients

1 lb fresh salmon fillet, skin removed

1/2 cup all-purpose flour

1/2 cup breadcrumbs (Panko for extra crunch)

1/2 tsp garlic powder

1/2 tsp paprika

Salt and pepper, to taste

2 tbsp olive oil, for frying

1/4 cup honey

3 cloves garlic, minced

2 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

1/2 tsp red pepper flakes (optional, for heat)

Fresh cilantro or green onions, for garnish

Instructions

Prep the Salmon: Cut the salmon fillet into bite-sized cubes, roughly 1-inch pieces. Season lightly with salt and pepper.

    Coat the Salmon:

      - In a shallow bowl, mix the flour, garlic powder, paprika, salt, and pepper.

        - In a second bowl, place the breadcrumbs.

          - Dredge each salmon piece in the flour mixture, shaking off any excess, then dip into the breadcrumbs, pressing lightly to adhere.

            Fry the Salmon:

              - Heat olive oil in a large skillet over medium-high heat.

                - Once hot, add the salmon bites in a single layer (work in batches if necessary) and cook for about 2-3 minutes on each side, or until golden brown and crispy. Remove from skillet and place on paper towels to drain any excess oil.

                  Make the Honey Garlic Sauce:

                    - In a small saucepan over medium heat, combine the honey, minced garlic, soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using).

                      - Cook for about 3-4 minutes, stirring constantly, until the sauce thickens slightly.

                        Combine and Serve:

                          - Drizzle the honey garlic sauce over the crispy salmon bites or toss them in a bowl with the sauce until evenly coated.

                            - Garnish with fresh cilantro or sliced green onions.
