Ingredients

500g beef flank steak, thinly sliced against the grain

1 cup cornstarch, for coating

1/2 cup vegetable oil, for frying

3 cloves garlic, minced

1 inch ginger, grated

2 red bell peppers, sliced (julienne)

3 green onions, sliced

1-2 fresh red chilies, sliced (adjust to taste)

1/4 cup sweet chilli sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon sugar

Salt and pepper, to taste

Optional: sesame seeds and additional green onions for garnish

Instructions

Prepare the Beef: In a mixing bowl, season the thinly sliced beef with salt and pepper. Let it marinate for about 15 minutes to enhance flavor.

Coat the Beef: Dredge each slice of marinated beef in cornstarch until fully coated. Shake off excess cornstarch and set aside.

Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering, about 350°F (175°C).

Fry the Beef: In batches, carefully add the coated beef slices to the hot oil. Fry until the beef is golden brown and crispy, approximately 3-4 minutes per batch. Remove and drain on paper towels.

Sauté Aromatics: In the same pan, discard excess oil, leaving about 1 tablespoon. Add the minced garlic, grated ginger, and sliced red chilies. Sauté for about 30 seconds until fragrant.

Add Vegetables: Toss in the sliced red bell peppers and a few green onions. Stir-fry for another 2-3 minutes until the peppers are slightly softened.

Prepare the Sauce: In a small bowl, mix together the sweet chilli sauce, soy sauce, rice vinegar, sesame oil, and sugar. Pour the sauce into the pan, stirring well to combine with the vegetables.

Combine Beef and Sauce: Add the crispy beef back into the pan and toss to evenly coat in the sauce and stir-fry for an additional 1-2 minutes until everything is heated through.

Garnish and Serve: Remove from heat and garnish with sesame seeds and extra green onions. Serve immediately with steamed rice or noodles.
