Crispy Bang Bang Salmon Bites (Sweet & Spicy)

Ingredients
  

1 lb (450g) fresh salmon fillet, skin removed and cut into bite-sized cubes

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

Salt and pepper, to taste

Vegetable oil, for frying

Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 teaspoon honey

1 teaspoon lime juice

Chopped green onions, for garnish

Sesame seeds, for garnish

Prepare the Salmon: In a medium mixing bowl, season the salmon cubes with salt and pepper. Toss to combine and set aside.

    Set Up Breading Station: In three separate shallow dishes, place the flour, beaten eggs, and panko breadcrumbs.

      Bread the Salmon: Dredge each salmon piece in flour, shaking off the excess. Dip into the beaten eggs, and then coat with the panko breadcrumbs, pressing gently to adhere. Repeat for all pieces.

        Fry the Bites: In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat. Once hot, carefully add the breaded salmon bites in batches to avoid overcrowding.           Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice until smooth.
