Ingredients
  

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp cayenne pepper (adjust for heat preference)

Salt and pepper to taste

Oil for frying (vegetable or peanut oil)

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust for heat preference)

1 tsp lime juice

Salt to taste

Marinate the Chicken: In a bowl, combine the chicken pieces with buttermilk. Cover and refrigerate for at least 1 hour or overnight for best results.

    Prepare the Flour Mixture: In another bowl, mix together the flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.

      Heat the Oil: In a deep pan or fryer, heat about 2 inches of oil to 350°F (175°C).

        Coat the Chicken: Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing gently to ensure a good coat. Shake off any excess flour.

          Fry the Chicken: Carefully add the coated chicken pieces to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 5-7 minutes or until golden brown and crispy on all sides. Use a slotted spoon to remove the chicken and drain on paper towels.

            Make the Bang Bang Sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and a pinch of salt until smooth and well combined.

              Serve: Once all chicken is fried, toss it in a bowl with the Bang Bang sauce until evenly coated, or serve the sauce on the side for dipping. Enjoy hot!
