Ingredients

1 lb flank steak (or sirloin)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

1 cup jasmine rice (or your choice of grain)

2 cups beef broth (or water)

1 medium avocado, sliced

1 cup cherry tomatoes, halved

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup shredded lettuce

¼ cup cilantro, chopped

½ cup salsa (store-bought or homemade)

Lime wedges for serving

Optional toppings: shredded cheese, sour cream, jalapeños, hot sauce

Instructions

Marinate the Steak: In a small bowl, whisk together olive oil, minced garlic, smoked paprika, ground cumin, salt, and pepper. Rub this mixture all over the flank steak and let it marinate for at least 30 minutes (ideally 2 hours).

Cook the Rice: In a medium saucepan, combine jasmine rice and beef broth (or water). Bring to a boil, then reduce to a simmer, cover, and cook for about 15-20 minutes until rice is tender. Remove from heat and let it rest, covered, for 5 minutes before fluffing with a fork.

Grill or Sear the Steak: Preheat a grill or skillet over medium-high heat. Once hot, cook the marinated steak for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from heat and let it rest for about 5 minutes before slicing thinly against the grain.

Prepare the Bowl: In each serving bowl, layer a generous scoop of cooked rice at the bottom. Top with sliced steak, black beans, corn, cherry tomatoes, sliced avocado, and shredded lettuce.

Garnish and Serve: Spoon over salsa, sprinkle with chopped cilantro, and add any optional toppings like cheese or sour cream. Serve each bowl with lime wedges on the side.

Enjoy! Mix all the ingredients together and savor your ultimate steak bowl experience!
