Creamy Roasted Garlic Tomato Soup

10 ripe Roma tomatoes, halved

1 entire head of garlic

2 tablespoons olive oil

1 medium onion, diced

2 tablespoons tomato paste

4 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup heavy cream (or coconut cream for a dairy-free option)

Fresh basil leaves, for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    Arrange the halved Roma tomatoes on a baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper.

      Cut the top off the head of garlic to expose the cloves, drizzle with a little olive oil, and wrap it in aluminum foil. Place it on the baking sheet with the tomatoes.

        Roast the tomatoes and garlic in the oven for about 25-30 minutes, or until the tomatoes are caramelized and the garlic is soft.

          In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

            Stir in the roasted tomatoes, squeezed-out garlic cloves, tomato paste, vegetable broth, dried basil, and oregano. Bring to a simmer and let cook for 10 minutes.

              Using an immersion blender (or carefully transferring to a regular blender), blend the soup until smooth.

                Return the blended soup to the pot, stir in the heavy cream, and heat through. Adjust seasoning with salt and pepper as needed.

                  Serve hot, garnished with fresh basil leaves for added flavor.
