Creamy Garlic Shrimp Pasta

8 ounces linguine or spaghetti

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken or vegetable broth

1 teaspoon Italian seasoning

Salt and pepper to taste

1/2 cup freshly grated Parmesan cheese

1 tablespoon fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of 1/2 lemon

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium-high heat, add 2 tablespoons of butter and 2 tablespoons of olive oil. Once hot, add the shrimp in a single layer, seasoning with salt and pepper. Cook for 2-3 minutes until they turn pink, then flip and cook for another 2 minutes. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, lower the heat to medium. Add the remaining 2 tablespoons of butter and minced garlic, cooking for about 1 minute until fragrant. Pour in the chicken or vegetable broth, and allow it to simmer for 2-3 minutes.

        Combine and Thicken: Stir in the heavy cream, Italian seasoning, lemon zest, and lemon juice. Allow the sauce to simmer for an additional 3-4 minutes until slightly thickened. If the sauce becomes too thick, add reserved pasta water a little at a time to achieve desired consistency.

          Mix Pasta and Shrimp: Add the cooked pasta and shrimp to the skillet with the sauce. Toss gently to combine, ensuring the pasta is well coated. Stir in the grated Parmesan cheese and adjust seasoning with salt and pepper as needed.

            Garnish and Serve: Remove from heat and sprinkle with fresh parsley. Serve immediately, garnished with additional Parmesan cheese if desired.
