1 lb chicken sausage (sliced)

1 cup orzo pasta

4 cups chicken broth

1 medium onion (diced)

3 cloves garlic (minced)

1 red bell pepper (diced)

1 zucchini (diced)

1 cup heavy cream

1 cup spinach (fresh)

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley (for garnish, optional)

Grated Parmesan cheese (for serving, optional)

Instructions
 

Sauté the Chicken Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the diced onion and garlic. Sauté for about 2 minutes until fragrant and the onion is translucent. Add the diced red bell pepper and zucchini, cooking for another 5 minutes until softened.

      Cook the Orzo: Add the orzo to the skillet and stir well to combine with the vegetables. Pour in the chicken broth and bring to a boil. Reduce heat to a simmer, cover, and cook for about 10 minutes, stirring occasionally until the orzo is tender and has absorbed most of the liquid.

        Add Cream and Spinach: Stir in the heavy cream, cooked chicken sausage, Italian seasoning, and fresh spinach. Cook for an additional 2-3 minutes until the spinach wilts and everything is heated through. Season with salt and pepper to taste.
