Ingredients

12 oz rotini pasta

1 can (15 oz) black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 cup diced bell peppers (a mix of colors)

½ cup red onion, finely chopped

1 cup shredded cheddar cheese

½ cup cooked bacon bits (optional for extra flavor)

¼ cup fresh cilantro, chopped

½ cup ranch dressing

¼ cup barbecue sauce

1 tsp garlic powder

Salt and pepper to taste

Lime wedges for serving

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain thoroughly and rinse under cold water to cool. Set aside.

Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, bell peppers, and red onion. If using frozen corn, thaw it by running it under warm water, then drain.

Combine the Ingredients: In a large mixing bowl, combine the cooked pasta, black beans, tomatoes, corn, bell peppers, red onion, cheddar cheese, bacon bits (if using), and cilantro.

Make the Dressing: In a separate small bowl, whisk together the ranch dressing, barbecue sauce, garlic powder, salt, and pepper until fully combined. Adjust seasoning to taste.

Mix It All Together: Pour the dressing over the pasta salad mixture and toss gently to coat everything evenly. Ensure all ingredients are well-distributed.

Chill the Salad: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld together.

Serve: Before serving, give the salad a gentle toss. Serve chilled, garnished with lime wedges to squeeze over the top for a zesty finish.
