Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

1 red bell pepper, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup low-sodium soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

2 tablespoons vegetable oil

1 tablespoon rice vinegar

1 teaspoon sugar (optional)

Cooked jasmine rice or noodles, for serving

Sesame seeds, for garnish

Green onions, sliced, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the sliced flank steak with soy sauce, oyster sauce, cornstarch, sesame oil, and rice vinegar. Mix well to coat the beef. Let it marinate for at least 20 minutes.

    Blanch the Broccoli: In a pot of boiling salted water, blanch the broccoli florets for about 2 minutes, then transfer them to an ice bath to stop cooking. Drain and set aside.

      Stir-Fry the Beef: Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the marinated beef in a single layer. Stir-fry for about 2-3 minutes until browned. Remove from the wok and set aside.

        Sauté the Aromatics: In the same wok, add the remaining tablespoon of vegetable oil. Add the minced garlic, ginger, and sliced red bell pepper. Stir-fry for about 1-2 minutes until fragrant.

          Combine Everything: Return the beef to the wok, add the blanched broccoli, and stir everything together. If you prefer a slightly sweeter sauce, add the sugar at this stage. Cook for an additional 1-2 minutes to heat through.

            Serve: Remove from heat and transfer to a serving dish. Garnish with sesame seeds and sliced green onions. Serve hot over jasmine rice or noodles.
