Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

2 cups broccoli florets

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

3 cloves garlic, minced

1 teaspoon fresh ginger, minced

1/2 cup beef broth (or water)

1 teaspoon sesame oil

1 tablespoon rice vinegar

Salt and pepper, to taste

Cooked jasmine rice, for serving (optional)

Instructions
 

In a bowl, combine the sliced flank steak with 1 tablespoon of soy sauce, cornstarch, and a pinch of salt and pepper. Mix well and let it marinate for about 15 minutes.

    While the beef is marinating, blanch the broccoli florets in boiling water for 2 minutes. Drain and immediately transfer them to a bowl of ice water to stop cooking. Set aside.

      In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the marinated beef in an even layer and cook until browned, about 2-3 minutes. Remove the beef from the pan and set aside.

        In the same skillet, add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.

          Pour in the beef broth, remaining soy sauce, oyster sauce, sesame oil, and rice vinegar. Stir well to combine.

            Add the blanched broccoli and the cooked beef back into the skillet. Toss everything together and cook for an additional 2-3 minutes, allowing the flavors to meld together.

              Taste and adjust seasoning with salt and pepper as needed.

                Serve hot over jasmine rice if desired.
