2 cups elbow macaroni

1 pound ground beef or turkey

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 can (6 oz) tomato paste

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

2 cups shredded cheddar cheese

1 cup beef broth or water

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Cook the Macaroni: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet or pot over medium heat, add the ground beef or turkey. Cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes. Drain excess fat if necessary.

      Sauté Aromatics: Add the diced onion and minced garlic to the pan with the meat. Sauté until the onion is translucent, about 3-4 minutes.
