1 lb ground chicken

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice preference)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

1 tbsp fresh parsley, chopped

1 bell pepper (any color), cut into 1-inch pieces

1 medium zucchini, sliced

1 red onion, cut into wedges

Olive oil for drizzling

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Prepare Chicken Mixture: In a large bowl, combine ground chicken, smoked paprika, cayenne pepper, garlic powder, onion powder, salt, black pepper, and fresh parsley. Mix well until all spices are evenly distributed.

    Shape Sausages: Take a handful of the chicken mixture and mold it around your skewer to form a sausage shape. Repeat this until all mixture is used.

      Prepare Vegetables: In a separate bowl, toss the bell pepper, zucchini, and red onion in olive oil, along with a pinch of salt and pepper.

        Assemble Skewers: Alternate threading the chicken sausages and vegetable pieces onto the skewers. You can create a pattern or just mix them up as you like.

          Preheat Grill or Oven: Preheat your grill to medium-high heat or your oven to 400°F (200°C).
