Chicken Avocado Melt Sandwich

2 slices of sourdough bread

1 ripe avocado

1 cup cooked chicken, shredded or sliced

1/2 cup shredded mozzarella cheese

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon lemon juice

Salt and pepper to taste

1 tablespoon olive oil

Fresh cilantro or parsley (optional, for garnish)

Tomato slices (optional)

Instructions
 

Prepare the Avocado Spread: In a bowl, mash the ripe avocado with a fork. Mix in the lemon juice, salt, and pepper. Set aside.

    Make the Chicken Mixture: In another bowl, combine the shredded chicken, mayonnaise, Dijon mustard, salt, and pepper. Stir until well-combined.

      Assemble the Sandwich: Lay out the slices of sourdough bread. On one slice, spread a generous amount of avocado mixture. On the other slice, layer the chicken mixture followed by the shredded mozzarella cheese.
