Chicken Avocado Melt Sandwich

2 cups shredded cooked chicken

1 ripe avocado, mashed

1/2 cup Greek yogurt (or mayonnaise)

1 tbsp Dijon mustard

1 tbsp fresh lime juice

1/4 cup chopped cilantro (or parsley)

Salt and pepper, to taste

4 slices of your favorite bread (sourdough, whole wheat, or ciabatta)

4 slices of pepper jack cheese (or cheese of your choice)

1 ripe tomato, sliced

1 cup spinach leaves

Butter, for grilling

Prepare the Chicken Mixture: In a large bowl, combine the shredded cooked chicken, mashed avocado, Greek yogurt (or mayonnaise), Dijon mustard, lime juice, and chopped cilantro. Mix well until everything is combined. Season with salt and pepper to taste.

    Assemble the Sandwiches: Lay out the slices of bread on a clean surface. On two slices, spread a generous amount of the chicken and avocado mixture. Top with a slice of pepper jack cheese, fresh tomato slices, and a handful of spinach leaves.
