1 can (400g) mixed beans (kidney, chickpeas, black beans, etc.), drained and rinsed

1 medium onion, finely chopped

2 cloves garlic, minced

1-2 green chilies, chopped (adjust to your spice preference)

1 teaspoon cumin seeds

1 teaspoon garam masala

½ teaspoon turmeric powder

Salt to taste

2 tablespoons olive oil

100g cheddar cheese, grated (or a vegan cheese alternative)

4 slices of whole grain or sourdough bread

Fresh coriander, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Base: In a large pan, heat the olive oil over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds until fragrant.

    Sauté Aromatics: Add the chopped onions and sauté until they turn translucent (about 5 minutes). Then, incorporate the garlic and green chilies, cooking for an additional 1-2 minutes.

      Add Spices: Stir in the garam masala and turmeric, allowing them to roast for a minute until they release their aroma.

        Mix in Beans: Add the drained mixed beans to the pan, along with salt to taste. Gently stir until all the beans are coated with the spice mixture. Cook for about 5-7 minutes, allowing the beans to heat through and absorb the flavors.

          Cheesy Goodness: Lower the heat and add half of the grated cheese to the bean mixture. Stir well to combine, letting the cheese melt into the beans. Remove the pan from heat.

            Toast the Bread: While preparing the bean mixture, toast the slices of bread until golden brown and crispy.

              Assemble the Dish: Place the toasted bread on plates and generously top each slice with the cheesy masala beans mix.

                Finish with Cheese: Sprinkle the remaining cheese over the top of the beans and place it under a broiler for 2-3 minutes until melted and bubbly, if desired.
