2 large boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup shredded mozzarella cheese

1 bell pepper, sliced (red or yellow for sweetness)

1 small red onion, thinly sliced

4 large tortillas (flour or whole wheat)

1 cup fresh spinach leaves

¼ cup ranch dressing (optional)

Fresh parsley, chopped, for garnish (optional)

Instructions
 

Prepare the Chicken: Start by preheating your grill or skillet over medium heat. Season the chicken breasts with olive oil, minced garlic, Italian seasoning, salt, and pepper on both sides.

    Cook Chicken: Place the seasoned chicken on the grill or in the skillet. Cook for about 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C). Remove from heat and let it rest for a few minutes before slicing.

      Sauté Veggies: In the same skillet, add sliced bell pepper and red onion. Sauté for about 3-4 minutes until they are tender and slightly caramelized.

        Assemble the Wraps: Take one tortilla and layer it with fresh spinach leaves, followed by sliced chicken, sautéed veggies, and a generous handful of shredded mozzarella cheese. If desired, drizzle with ranch dressing.
