Cheesy Beef Enchilada Tortellini

1 pound ground beef

1 pack (9 oz) cheese-filled tortellini

1 cup enchilada sauce

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional)

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.

      Season and Cook the Beef: Add the ground beef to the skillet. Break it apart with a spatula and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

        Add Spices and Sauce: Reduce heat to low, then stir in the cumin, chili powder, salt, and pepper. Pour in the enchilada sauce and mix well. Allow the mixture to simmer for about 5 minutes, letting the flavors meld.
