Ingredients

For the Burritos:

1 lb ground beef

1 cup cooked rice (white or brown)

1 cup black beans (canned, drained, and rinsed)

1 cup shredded cheddar cheese

1/2 cup salsa (mild or hot, based on your preference)

4 large flour tortillas

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper, to taste

1 tablespoon olive oil

Chopped fresh cilantro (optional, for garnish)

For the Crispy Fries:

4 medium russet potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Crispy Fries:

    - Preheat your oven to 425°F (220°C).

      - Wash and peel the potatoes, then cut them into thin, uniform sticks.

        - In a large mixing bowl, toss the potato sticks with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

          - Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for about 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

            Cook the Beef Filling:

              - While the fries are cooking, heat olive oil in a large skillet over medium heat.

                - Add the ground beef, breaking it apart with a spatula. Cook until browned and fully cooked (about 5-7 minutes).

                  - Drain excess grease if necessary, then stir in cooked rice, black beans, salsa, chili powder, cumin, salt, and pepper. Mix well and let it simmer for about 5 minutes, allowing the flavors to meld.

                    Assemble the Burritos:

                      - Lay a flour tortilla flat on a plate. Spoon a generous amount of the beef mixture onto the center, sprinkle with shredded cheddar cheese, and fold in the sides of the tortilla. Roll tightly from the bottom up, ensuring all fillings are enclosed.

                        - Repeat with the remaining tortillas and filling.

                          Grill the Burritos:

                            - In the same skillet, add a little oil over medium heat. Place the burritos seam-side down and grill them for about 2-3 minutes on each side, until golden brown and crispy.

                              Serve:

                                - Plate the grilled burritos alongside the crispy fries. Garnish with chopped cilantro and parsley if desired. Serve with extra salsa or your favorite dipping sauce.
