6 medium-sized russet potatoes, peeled and diced

8 slices of thick-cut bacon, chopped

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 green onions, sliced (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with non-stick spray or butter.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crisp, about 5-7 minutes. Once cooked, remove the bacon and drain on a paper towel, reserving about 1 tablespoon of bacon grease in the skillet.

      Sauté the Potatoes: In the same skillet, add the diced potatoes. Season with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are tender and starting to brown.

        Whisk Eggs and Milk: In a mixing bowl, whisk together the eggs, milk, and a pinch of salt and pepper until well combined.

          Layer the Casserole: In the greased baking dish, layer half of the cooked potatoes evenly across the bottom. Spread half of the cooked bacon on top, followed by half of the cheddar and mozzarella cheeses. Repeat the layers with the remaining potatoes, bacon, and cheeses.

            Pour the Egg Mixture: Pour the egg and milk mixture evenly over the layered ingredients in the baking dish.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes until the casserole is set and the top is golden brown.

                Cool and Serve: Let the casserole cool for 5 minutes before slicing. Garnish with sliced green onions before serving.
