Over the decades, this simple yet satisfying sandwich has evolved, with various toppings and bread choices appearing, but the core ingredients remain the same: thinly sliced beef, cheese (often Cheez Whiz, provolone, or American), and sautéed onions.

Cheesesteak Tortellini in Rich Provolone Sauce

12 oz cheese tortellini (fresh or frozen)

1 lb ribeye or sirloin steak, thinly sliced

1 medium onion, sliced

1 green bell pepper, sliced

3 cloves garlic, minced

2 cups heavy cream

1 ½ cups provolone cheese, shredded

1 tablespoon olive oil

2 tablespoons Worcestershire sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced onion and green bell pepper. Sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Cook the Steak: Push the vegetables to one side of the skillet. In the same skillet, add the thinly sliced steak. Season with salt and pepper, and add Worcestershire sauce. Cook for about 3-4 minutes until the steak is browned and cooked to your liking. Mix everything together in the skillet.

        Make the Provolone Sauce: Lower the heat to medium-low, and pour in the heavy cream. Allow it to simmer for a few minutes until slightly thickened. Gradually stir in the provolone cheese until melted and the sauce is creamy. Adjust seasoning with salt and pepper if needed.

          Combine Tortellini and Sauce: Add the cooked tortellini to the skillet and gently toss to coat in the rich provolone sauce. Cook for an additional 2-3 minutes, allowing everything to heat through.

            Serve: Remove from heat, and garnish with fresh chopped parsley. Serve immediately for a comforting and indulgent meal.
