Ingredients
  

2 large carrots, grated

1 large apple (preferably a crisp type like Fuji or Honeycrisp), grated

1/4 cup raisins or dried cranberries

1/4 cup walnuts or pecans, chopped (optional)

1/4 cup Greek yogurt or dairy-free yogurt

2 tablespoons honey or maple syrup

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and apple.

    Add the raisins or cranberries and chopped nuts (if using) to the bowl and stir until well mixed.

      In a separate small bowl, whisk together the Greek yogurt (or dairy-free yogurt), honey (or maple syrup), lemon juice, ground cinnamon, and a pinch of salt until smooth and creamy.

        Pour the dressing over the carrot and apple mixture, and toss gently to coat all the ingredients evenly.

          Let the salad sit for about 10 minutes to allow the flavors to meld.
