Biscuits and Chorizo Gravy

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

3/4 cup buttermilk

For the Chorizo Gravy:

1/2 pound chorizo sausage, casings removed

1/4 cup all-purpose flour

2 cups whole milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional, for extra heat)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Biscuits:

    - Preheat your oven to 425°F (220°C).

      - In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

        - Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingertips to mix until the mixture resembles coarse crumbs.

          - Gradually add the buttermilk, stirring until just combined. Do not overmix.

            - Turn the dough out onto a floured surface and gently knead it a couple of times until it comes together. Pat the dough into a 1-inch thick rectangle.

              - Use a biscuit cutter or a glass to cut out biscuits, re-rolling the scraps as necessary.

                - Place the biscuits onto a greased baking sheet and bake for 12-15 minutes, or until golden brown.

                  Make the Chorizo Gravy:

                    - In a large skillet, cook the chorizo over medium heat, breaking it apart with a spoon until fully cooked and browned, about 5-7 minutes.

                      - Remove the cooked chorizo from the skillet and set aside, leaving the drippings in the pan.

                        - Stir in the flour to the drippings and cook for about 1 minute to form a roux.

                          - Gradually whisk in the milk, and continue to stir until the mixture thickens, about 3-5 minutes.

                            - Add garlic powder, onion powder, cayenne pepper (if using), and the cooked chorizo back into the gravy. Season with salt and pepper to taste.

                              Serve:

                                - Split the warm biscuits in half and ladle a generous amount of chorizo gravy over the top.

                                  - Garnish with chopped parsley for an added fresh touch.
