1 cup all-purpose flour

1/4 cup boiling water

1/4 tsp salt

1/2 cup finely chopped vegetables (carrots, cabbage, and green onions)

1/2 cup cooked minced chicken or tofu (for a vegetarian option)

1 tbsp curry powder

1 tsp ginger paste

1 tsp garlic paste

Salt and pepper to taste

For the Soup:

4 cups vegetable or chicken broth

1 can (400ml) coconut milk

2 tbsp red curry paste

1 tbsp soy sauce

1 tbsp fish sauce (optional)

1 tbsp lime juice

Fresh cilantro for garnish

Lime wedges for serving

Prepare the Dumplings:

    - In a mixing bowl, combine the flour and salt. Slowly mix in the boiling water while stirring with a fork until the dough starts coming together.

      - Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 15 minutes.

        - In a separate bowl, mix the chopped vegetables, minced chicken or tofu, curry powder, ginger, garlic, salt, and pepper.

          - Roll out the resting dough on a lightly floured surface, and cut it into small circles (about 3 inches in diameter).

            - Place a small spoonful of the filling in the center of each circle, fold over, and pinch the edges to seal. Set aside.

              Prepare the Soup:

                - In a large pot, combine the broth, coconut milk, and red curry paste. Bring to a gentle simmer over medium heat.

                  - Stir in the soy sauce and fish sauce, allowing the flavors to meld for about 5 minutes.
