400g pasta (fettuccine or your choice)

300g ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 carrot, grated

1 celery stalk, finely chopped

400g canned diced tomatoes

2 tbsp tomato paste

1 cup beef broth

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

2 tbsp olive oil

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Ragu: In a large skillet or saucepan, heat olive oil over medium heat. Add the chopped onion, minced garlic, grated carrot, and chopped celery. Sauté for about 5 minutes until vegetables are softened.

      Brown the Beef: Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 7-8 minutes. Drain excess fat if necessary.

        Add Tomatoes and Broth: Stir in the canned diced tomatoes, tomato paste, and beef broth. Season with dried oregano, dried basil, salt, and pepper. Bring the mixture to a gentle simmer.

          Simmer the Sauce: Reduce heat to low and let the sauce simmer uncovered for about 25-30 minutes, stirring occasionally. This helps the flavors to meld together.

            Combine Pasta and Sauce: Once the sauce has thickened, add the cooked pasta to the sauce. Toss well to ensure the pasta is thoroughly coated.
