BBQ Chicken Quesadilla

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1/2 red onion, thinly sliced

1/2 cup corn (canned or frozen)

4 large flour tortillas

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Fresh cilantro, chopped (for garnish)

Sour cream and guacamole (for serving)

Instructions
 

Prepare the Filling: In a bowl, combine the shredded chicken, BBQ sauce, garlic powder, onion powder, and smoked paprika. Mix until the chicken is evenly coated with the sauce.

    Sauté Vegetables: In a skillet over medium heat, add 1 tablespoon of olive oil. Sauté the sliced red onion until softened, about 3-4 minutes. Add the corn and cook for an additional 1-2 minutes. Remove from heat and set aside.

      Assemble Quesadillas: Heat a clean skillet over medium heat. Place one tortilla in the skillet. Layer half of the tortilla with a mix of the BBQ chicken, sautéed vegetables, mozzarella cheese, and cheddar cheese. Fold the tortilla in half to cover the filling.

        Cook Quesadilla: Cook for about 3-4 minutes on each side or until the tortilla is golden brown and the cheese has melted. Repeat with the remaining tortillas and filling mixture.

          Serve: Cut each quesadilla into wedges and garnish with fresh cilantro. Serve with sour cream and guacamole on the side.
