Ingredients

1 cup pearl barley

4 cups water or vegetable broth

1 cup almond milk (or any milk of choice)

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Pinch of salt

Fresh fruits for topping (such as sliced bananas, berries, or apples)

Chopped nuts or seeds for garnish (like almonds, walnuts, or chia seeds)

A dollop of yogurt (optional)

Instructions

Rinse the pearl barley under cold running water to remove any impurities. Drain and set aside.

In a large saucepan, combine the rinsed barley, water or vegetable broth, and a pinch of salt. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 30-35 minutes, or until the barley is tender and most of the liquid has been absorbed.

Stir in the almond milk, maple syrup, vanilla extract, and cinnamon. Continue to cook for an additional 5-10 minutes, stirring occasionally until the mixture becomes creamy and thick.

Once the porridge has reached your desired consistency, remove it from heat. Taste and adjust sweetness or spices if needed.

Serve the barley porridge warm in bowls, topped with your choice of fresh fruits, a sprinkle of nuts or seeds, and a dollop of yogurt if desired.

Enjoy your creamy barley porridge as a nourishing breakfast or snack!
