Ingredients

1 lb boneless, skinless chicken breasts

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

Salt and pepper to taste

Vegetable oil for frying

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup sliced cucumbers

1 cup shredded red cabbage

1 avocado, sliced

Fresh cilantro leaves for garnish

For the Bang Bang Sauce:

1/2 cup mayonnaise

2-3 tablespoons sweet chili sauce (adjust to taste)

1 tablespoon sriracha (adjust for spice preference)

1 teaspoon garlic powder

Juice of 1 lime

Instructions

Prepare the Bang Bang Sauce: In a medium bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, garlic powder, and lime juice until smooth. Adjust the levels of sweet chili and sriracha to suit your taste. Set aside.

Prep the Chicken: Slice the chicken breasts into bite-sized pieces. Season with salt and pepper. Set up a dredging station with three shallow dishes: one with cornstarch, one with beaten eggs, and one with panko breadcrumbs.

Coat the Chicken: Dredge each piece of chicken in cornstarch, shaking off the excess. Dip into the beaten eggs, then coat in panko breadcrumbs, pressing lightly to adhere.

Fry the Chicken: In a large skillet, heat a generous amount of vegetable oil over medium-high heat. Once hot, add the breaded chicken pieces in a single layer (do not overcrowd). Fry for about 4-5 minutes on each side until golden brown and cooked through. Use a slotted spoon to transfer the chicken to a paper towel-lined plate to drain.

Assemble the Bowls: In serving bowls, layer the cooked jasmine rice as the base. Top with the fried chicken, followed by shredded carrots, sliced cucumbers, shredded red cabbage, and avocado slices.

Drizzle with Sauce: Generously drizzle the Bang Bang sauce over the top of each bowl. Garnish with fresh cilantro leaves.

Serve and Enjoy: Serve immediately while the chicken is warm and crispy. Enjoy your delicious Bang Bang Chicken Bowls!
