Ingredients
  

1 lb (450g) boneless chicken thighs

2 cups jasmine rice

1 cup broccoli florets

1 red bell pepper, sliced

1 avocado, sliced

1/4 cup peanuts, chopped

4 green onions, sliced

1 tablespoon olive oil

Salt and pepper, to taste

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to your heat preference)

1 teaspoon garlic powder

1 teaspoon lime juice

Instructions
 

Marinate the Chicken: In a bowl, mix the chicken thighs with olive oil, salt, and pepper. Let it marinate for at least 15 minutes for flavor absorption.

    Prepare the Rice: In a medium pot, cook the jasmine rice according to package instructions. Typically, use 1 cup of rice to 1.5 cups of water; bring to a boil, then reduce heat to low, cover, and simmer until fluffy.

      Cook the Chicken: In a skillet over medium heat, cook the marinated chicken thighs for about 5-7 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F/75°C). Remove from the pan and let it rest before slicing it into strips.

        Blanch the Broccoli: In the same skillet, add the broccoli florets and a splash of water. Cover to steam for about 2-3 minutes until bright green and tender-crisp. Drain and set aside.

          Slice the Bell Pepper: Meanwhile, slice the red bell pepper and avocado.
