Bang Bang Chicken Bowl

1 lb boneless, skinless chicken thighs

1 cup cornstarch

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 tbsp sriracha (adjust for spice preference)

2 tbsp soy sauce

1 tsp garlic powder

1 tsp onion powder

1/2 tsp black pepper

2 cups cooked jasmine rice

1 cup shredded cabbage (red or green)

1/2 cup sliced cucumbers

1/4 cup chopped green onions

1 tbsp sesame seeds (optional)

Fresh cilantro for garnish

Salt to taste

Instructions
 

Prepare the Chicken: Pat the chicken thighs dry with paper towels and season with salt, black pepper, garlic powder, and onion powder. Ensure they're evenly coated.

    Coat the Chicken: In a shallow dish, add the cornstarch. Dredge each chicken thigh in the cornstarch, ensuring it's well-coated. Shake off any excess.

      Fry the Chicken: Heat a few tablespoons of oil in a large skillet over medium-high heat. Once hot, add the chicken thighs (in batches if necessary) and cook until golden brown and cooked through, about 5-7 minutes per side. Transfer to a plate lined with paper towels to drain excess oil.

        Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and soy sauce until smooth and well combined.

          Assemble the Bowl: In a serving bowl, place a generous scoop of cooked jasmine rice at the bottom. Top with shredded cabbage, followed by the crispy chicken thighs. Drizzle the Bang Bang sauce over the top.

            Garnish: Add the sliced cucumbers and sprinkle with chopped green onions and sesame seeds. Finish with fresh cilantro for a burst of flavor.
