1 lb boneless, skinless chicken thighs

2 tablespoons cornstarch

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons vegetable oil

1 cucumber, thinly sliced

1 cup shredded carrots

1 bell pepper, thinly sliced

2 cups cooked jasmine rice

1/4 cup green onions, sliced (for garnish)

Toasted sesame seeds (for garnish)

Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

Salt, to taste

Instructions
 

Prepare the Chicken: In a bowl, mix together cornstarch, garlic powder, smoked paprika, salt, and pepper. Toss the chicken thighs in the mixture until well coated.

    Cook the Chicken: Heat vegetable oil in a skillet over medium-high heat. Add the chicken and cook for about 5-7 minutes per side or until golden brown and cooked through. Remove from the pan and let rest for a few minutes before slicing into bite-sized pieces.
