Bang Bang Chicken Bowl

Featuring crispy, buttermilk-marinated chicken thighs, tossed with a zesty Bang Bang sauce, this bowl is packed with flavor. For the Chicken:

1 lb (450g) boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1-2 tbsp Sriracha (adjust to taste)

1 tsp lime juice

For the Bowl:

2 cups cooked jasmine rice (or brown rice)

2 cups mixed greens (spinach, arugula, spinach)

1 avocado, sliced

1/2 cup shredded carrots

1/2 cup diced cucumber

1/4 cup green onions, chopped

Sesame seeds for garnish

Instructions
 

Marinate the Chicken: In a bowl, add the chicken thighs and pour over the buttermilk. Ensure the chicken is fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Prepare the Bang Bang Sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth. Taste and adjust the spice level according to your preference. Set aside.

      Coat the Chicken: In a large bowl, combine flour, garlic powder, onion powder, paprika, salt, and pepper. Remove the chicken from the buttermilk, allowing any excess to drip off, and dredge in the flour mixture until well coated.

        Fry the Chicken: Heat oil in a deep frying pan over medium-high heat. Once hot, carefully add chicken pieces in batches (avoid overcrowding). Fry for about 4-5 minutes per side or until golden brown and cooked through. Place on paper towels to drain excess oil.

          Assemble the Bowl: In each serving bowl, layer the cooked rice, followed by a handful of mixed greens. Place slices of avocado and top with shredded carrots, diced cucumber, and chopped green onions.

            Add the Chicken: Cut or chunk the fried chicken into bite-sized pieces and place them on top of the arranged vegetables.
