Ingredients

1 ripe banana, mashed

1/2 cup unsweetened applesauce

1/3 cup melted coconut oil (or vegetable oil)

1/2 cup brown sugar

1/4 cup granulated sugar

1 large egg

1 tsp vanilla extract

1 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions

Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

In a mixing bowl, combine the mashed banana, applesauce, melted coconut oil, brown sugar, and granulated sugar. Mix until well combined and smooth.

Add the egg and vanilla extract to the mixture and stir until incorporated.

In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.

Gradually add the dry ingredients to the wet mixture, stirring just until no streaks of flour remain. Be careful not to overmix.

If desired, fold in the chopped nuts and chocolate chips for added texture and sweetness.

Pour the batter into the prepared baking pan, spreading it evenly.

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (a little gooey is okay for that brownie texture!).

Allow the brownies to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Cut into squares and enjoy!
