8 ounces of your favorite pasta (penne or fusilli works great)

1 block (8 ounces) of feta cheese

1 pint of cherry tomatoes

3 tablespoons of olive oil

3 cloves of garlic, minced

1 teaspoon of dried oregano

1 teaspoon of red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: 1 cup of spinach or arugula

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a 9x13 baking dish, add the cherry tomatoes and place the block of feta cheese in the center.

      Seasoning: Drizzle the olive oil over the tomatoes and feta. Sprinkle the minced garlic, dried oregano, red pepper flakes, salt, and pepper evenly over the entire dish.

        Bake: Place the dish in the preheated oven and bake for about 30 minutes, or until the tomatoes burst and the feta is softened and slightly golden.

          Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Reserve about ½ cup of pasta water before draining.

            Combine Ingredients: Once the baking is complete, remove the dish from the oven. Using a fork, mash the feta and burst the tomatoes together to create a creamy sauce. If using, stir in the spinach or arugula until it wilts.

              Mix with Pasta: Add the drained pasta to the baking dish, mixing everything together. If the mixture is too thick, gradually stir in some reserved pasta water until you reach your desired consistency.

                Garnish and Serve: Top with fresh basil leaves and additional red pepper flakes if desired. Serve hot and enjoy!
